Spicy Tomato Quinoa

Is this becoming a food blog? I dunno. Well, here's another recipe I made up today. It's pretty delicious.

Ingredients:

1 cup uncooked Quinoa
3 cups Water
Extra Virgin Olive Oil (I'm copying Rachael Ray with the abbreviation "EVOO")
Salt and Pepper (S+P)
1 spoonful of Chicken Bouillon (I'm guessing a little less than a tablespoon)
1 tsp dried Parsley
1 pinch Red Chilli Flakes (or more if you'd like)
1 tsp dried Oregano
2 tsp Cumin
1 tbsp Worcestershire sauce (the secret ingredient...shhh)
3 cloves of Garlic, minced
1/4 cup minced Onion (whatever kind)
1 14.5 oz can of diced Tomatoes

De steps:

1.) Bring uncooked Quinoa, water, EVOO, Bouillon, S+P, and Parsley to a boil; once boiled, cover for about 13-15 minutes.

2.) Meanwhile, saute onion and garlic; add entire can of Tomatoes and combine with a little bit of EVOO.

3.) Mix in the Red Chilli Flakes and Oregano into the tomato sauce and cover for about 5 minutes.

4.) Fluff up the Quinoa with a fork, and add tomato sauce. Mix lightly, and serve.

That's it! Simple, huh? I served my Spicy Tomato Quinoa with grated Parmigiano Reggiano and chopped fresh Basil leaves.

Rigatoni Pomodoro con Pancetta

I created this pasta with what was in the fridge and had this for lunch today. And so did my daddy. And my mommy too. It turned out quite lovely.

1 lb any Pasta variety (I used Mezzi Rigatoni)
1 26oz jar of Tomato Sauce
1/2 cup Ricotta cheese
7 slices of thinly sliced Pancetta
6 slices of good Pepperoni
Fresh Basil
3 cloves of Garlic (or more, depending on your taste)
Olive Oil
Parmesan (preferably grated)
Red Chilli Pepper flakes

de steps:

1.) Bring water to a boil in a saucepan; add a couple tablespoons of olive oil and a sprinkle of salt- it gives the pasta nice flavor, and it prevents your noodles from sticking together. Cook al dente.

2.) Meanwhile, heat up a saute pan with olive oil; while that's heating up, mince your garlic, and julienne-cut your basil (about three-four leaves)

3.) Add the garlic and basil to the heated saute pan, and saute for about a minute. Add a pinch or two of the red chilli flakes.

4.) Place your pancetta and pepperoni on the saute pan, and heat through giving a bit of a pan fry, about a minute or two-remove from heat and set aside.

5.) On a cutting board, mince up the pancetta real fine, to the consistency of corned beef hash. Stack up the pepperoni and cut up in eighths.

6.) Pour the entire jar of tomato sauce onto the saucepan, and add a ladle of pasta water and a drizzle of olive oil.

7.) Add the meats to the sauce and stir in. Add the ricotta and mix well.

8.) Mix together the pasta and the sauce...serve!

Crack Corn

Freakin' delicious stuff. I literally just invented this biznitch 10 minutes ago. Enjoy!

1 bag ordinary popcorn (I used Orville Redenbachers Tender White)
1 tbsp worsteshire sauce
3-4 tbsp butter
dried parsley
shredded parmesean cheese
red chilli flakes

de steps:

Uno: Pop up yer popcorn, and put in a good sized bowl

Dos: In a microwavable bowl, wisk together the worsteshire and butter and microwave for about 30 seconds.

Tres: Remove from microwave and pour all over yer popcorn and mix well (I used those bear-claw salad tosser thingies, it worked quite awesomely)

Quatro: Grate some parmesean over your popcorn, and some parsley and a pinch of red chilli flakes...toss it all together and viola!

Mary Janes and Marble Eyes.

1.) I was obsessed with The Powerpuff Girls- no, seriously. I had sooo much stuff. I had a Bubbles pillow pretty much the size of me, lunchboxes, and the coolest costume ever when I was four years old; Pink cotton dress with black stripe across the tummy, and Blossom wig, it had the red bow and everything. Plus, my mommy didn't make me where those boot coverings you're supposed to put on over your sneakers...she let me wear real high-heel Mary Janes and white stockings; I pretty much had the best costume, ever.

2.) My parents got married when I was about four years old; when discussing their wedding, they told me the possibility of one of my pre-school teachers marrying them, you know, like performing the ceremony or whatever; I immediately freaked out and thought that this woman was going to replace either my mother or my father. Boy, was I wrong...

3.) I remember singing Spice Girl songs with other girls at my pre-school, and that I was ALWAYS Baby Spice, which is ironic because I have never in my life been blonde.

4.) I received two Britney Spears Barbie dolls as a little girl; I chopped the hair off of one of them, and gave Skipper a boyfriend.

5.) For Christmas (Or maybe it was my birthday) I had received an Angelica doll, from the cartoon Rugrats. She sang and danced and scared the crap out of me. One night, as I was trying to fall asleep, she came alive in my toy box, like seriously, the doll started singing and I was so scared! My mom came in the room, and tried to get the possessed toy to shut up. Angelica wouldn't budge; she just kept singing her juvenile jingle. Fed up with this demon toy, my mom took her downstairs and I don't know what she did...but that doll stopped singing. I tried to ponder all the things that happened to the poltergeist infested plastic toy, and I thought she was gonna come upstairs and kill me...

6.) Another thing about dolls; I had so many of them as a little girl. And my wonderful mother happened to arrange them on a shelf, directly facing my bed. I swear, those dolls were staring at me. And blinking. Piercing marble eyes looking at you while you're trying to fall asleep is just lovely, you know?
